Banana Loaf
Prep time (for 10 serves): 15 minutes. Cook time: 55 minutes.
Per child, this recipe provides: 1 serve of veggies and 1 serve of meat/meat alternative.
Ingredients:
- 2 ½ cups Self raising flour
- 1⁄3 cup Plain flour
- 1 tsp Cinnamon, ground
- 2⁄3 cup Brown sugar
- 3 Bananas, medium
- 3 Eggs
- 60mL Vegetable oil
- 2⁄3 cup Milk, full cream

Method:
- Preheat oven to 180°C fan forced. Spray and line loaf tins with baking paper.
- Mix flours, cinnamon and brown sugar in a bowl. Set aside.
Peel bananas and place in a separate medium/large bowl and mash with a fork. - In a third bowl, lightly whisk the eggs, then add milk and oil. Gently mix and then add to the banana mash.
- Combine the wet ingredients to the dry ingredients. Mix lightly to ensure you do not overmix!
- Divide into loaf tins and bake for 40–45 minutes or until golden brown and a skewer comes out clean.
- Remove from oven and allow to cool for 5–10 minutes, then turn onto a wire cooling rack.
To serve: Slice into 1cm thick slices, with each piece cut into half.
Allergen alternatives:
For gluten free, use gluten free plain flour and gluten free self raising flour.
For dairy free, use rice milk.
For egg free, use egg replacer or chia eggs.
Top tip:
Banana Loaf is a great way to use up brown or soft bananas. Store peeled bananas in the fridge or freezer until ready to be used.
